Make It With Mollie - Chicken, Spinach, Pesto Pasta

 

  1. Turn your oven to 180 degrees, season your chicken breasts with salt & pepper and place them onto a pan with grease proof paper. Pop into the oven for 20mins ( or you can roast a whole chicken for 1hour 15mins if preferred) 
  2. Place water into a pan and and bring to the boil
  3. Once the water is boiling, place your desired type of pasta into the pan and cook
  4. Once the your roasted chicken or chicken breasts are ready, start to shred them
  5. In another pan, spoon in your desired amount of pesto and add some of the boiling pasta water to the pesto - stir
  6. Once the pasta is cooked, drain the water away and pop the pasta back into the empty pan 
  7. Get a big handful of spinach and pop it in with the pasta and stir to wilt it down
  8. Place the shredded chicken into the pasta and spinach and stir
  9. You can either then add the pesto into the pan and mix all the ingredients together or pop the pasta mix into a serving dish and pour the pesto on top 
  10. Decorate with a couple of fresh basil leaves, salt and pepper and serve
  11. Et Voila
