Salmon, Cauliflower Rice, Roasted Veg & Raw Basil Pesto

  1. Break apart a whole cauliflower and place a handful of florets each time into the magi mix and blitz
  2. Once all the cauliflower is blitz, set aside
  3. Chop your courgettes into round circles
  4. Place your Salmon into tin foil with salt and pepper and tomatoes into a baking tray with grease proof paper and cook for 20mins
  5. Heat some sunflower oil into a frying pan and pop in your chopped courgette - cook until golden
  6. Add your cauliflower rice into the courgette pan and cook for 3-4 mins - stir
  7. Take your salmon and tomatoes out of the oven
  8. Put your roasted tomatoes into the cauliflower rice and courgettes and mix together
  9. Place you cauliflower rice mix onto a plate and then top it with your roasted salmon
  10. Spoon lots of raw basil pesto on top of your salmon and sprinkle with salt and pepper all over and a squeeze of lemon.
